Always use only fresh filtered water or spring water. Fine water makes a finer cup of tea, and you will taste the difference.
Never reuse previously boiled water. Always use fresh water. This ensures brewing a finer cup of tea.
It's crucial not to use boiling water for any Green Tea! Here's the correct method: Bring the water to a boil, then let it cool for 1-2 minutes until it reaches about 185°F to 180°F.
Using boiling water can scald and damage the delicate Green Tea, resulting in bitterness. This can lead to a misunderstanding that the Green Tea itself is bitter when, in fact, it was brewed incorrectly.
The recommended ratio is 1 to 2 teaspoons of tea leaves per 8-ounce cup. (250ml)
